I love sandwich cookies! I'm kind of obsessed with them. And spritz cookies are the perfect size for making a little mouth sized sandwich cookie. These vanilla spritz cookies have a splash of orange oil in them. I sprinkled the cookies with a white sparkling sugar before they went in the oven. The buttercream filling is made with butter, fresh squeezed orange juice, orange zest & powdered sugar. Simple to put together - makes a lovely presentation and most importantly.....so very delicious! The flavor is a nice bright refreshing orange.
