These were pretty good but I thought I'd be more wild about them. They were easy to make. The recipe is from the Hershey's website. Their website has so many wonderful recipes with common ingredients that we probably all have in our cupboards. S'mores happen to be one of my favorite things to eat, ever! I LOVE s'mores so I figured I couldn't go wrong with these. They are definitely delicious although a little messy to eat. But an actual s'more is tons messier to eat than these! One thing I really like about these is that half of the crumb/crust mixture is pressed on the bottom of the pan and the remainder is crumbled on top of the marshmallows before returning them to the oven. So you gets bites of crunchy graham cracker crust along with the gooey golden marshmallows. I made a double recipe which FILLED a 13x9 inch pan. I think I added more marshmallows than the recipe stated. All I had was the big huge marshmallows that I have been seeing in the stores this year - the ones that have been marketed just for the purpose of making s'mores. Have you seen those marshmallows? WAY bigger than your average large marshmallows. They are huge! But that is what I had on hand so I grabbed a bunch of them and cut them up into much smaller pieces. And although I had 6 Hershey bars, that wasn't enough to cover the pan so I had to add some milk chocolate chips in spots but that worked really well. These are definitely a bar cookie that you need to wait till they fully cool before cutting them. They are so gooey and sticky. I had to slice a very thin layer of each side off before cutting them into bars because they stuck so badly to the sides of my foil covered pan - even though I sprayed it well.

S'mores Sandwich Bar Cookies
from Hershey's KitchensIngredients:
- 1/2 cup (1 stick) butter or margarine, softened
- 3/4 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1-1/3 cups all-purpose flour
- 3/4 cup graham cracker crumbs
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 5 HERSHEY'S Milk Chocolate Bars (1.55 oz. each), unwrapped
- 3 cups miniature marshmallows
Directions:
1. Heat oven to 350°F. Grease 8-inch square baking pan.2. Beat butter and sugar until well blended in large bowl. Add egg and vanilla; beat well. Stir together flour, graham cracker crumbs, baking powder and salt; add to butter mixture, beating until blended. Press half of dough in prepared pan. Bake 15 minutes.
3. Arrange unwrapped chocolate bars over baked layer, breaking as needed to fit. Sprinkle with marshmallows; scatter bits of remaining dough over marshmallows, forming top layer. Bake 10 to 15 minutes or just until lightly browned. Cool completely in pan on wire rack. Cut into bars. 16 bars.

ReplyDeleteThese look so good! Have you seen/heard of S'mores Brownies? I saw a recipe for them on Picky Palate's blog and made them for the Fourth of July. They were delicious. Just a layer of brownie mix, a layer of graham crackers, a layer of chocolate bars and a layer of marshmallows and more brownie mix on top. Easy as pie; easier, actually.
