Kit Kat bars?

I'm not sure what to say about these bars. But first I must admit that they are delicious. Delicious and different. This is a Paula Deen recipe and I found it in my new Paula Deen Best Desserts magazine - special collector's issue. I was so excited to try this recipe when I bought the magazine. It's an odd recipe. I had a tough time putting it together although it looks ok in the end. First you line the bottom of a 13x9 inch pan with Club Crackers. Then you create this butter, brown sugar, milk, granulated sugar, graham cracker crumb concoction on top of the stove & bring it to a boil. After it boils, you spread 1/2 it on the layer of crackers in the pan. How in the heck are you supposed to do that? The crackers are just lightly sitting there. You barely bump the pan and the crackers scatter all over the bottom of the pan. And I'm supposed to spread this stuff that's as thick as peanut butter over all of these carefully placed crackers? And spread it evenly? I had a hell of a time and I suspected this creation would end in disaster but I forged ahead. After you spread this junk, you layer crackers again and then spread the junk AGAIN, then layer more crackers which you then top with a mixture of melted butterscotch chips, chocolate chips & peanut butter. I finished - let the pan sit for awhile in the fridge - then removed the pan an hour later to take a look. I was pleasantly surprised at my masterpiece! It somehow looked put together nicely and tasted wonderful! I don't know why it's called a "Kit Kat" other than the crunchy cracker part & chocolate because Kit Kats don't normally have butterscotch & peanut butter. But whatever, these are wonderful but a bitch to make!

Sooooo frustrating! This was as evenly spread as I could get.

Hmmm....these don't look too bad.

Wow, I'm impressed with myself now. These look AND taste good.


The butterscotch & peanut butter flavors are very subtle. The salt on the crackers is a nice touch.


Homemade KitKat Bars
from Paula Deens Best Desserts Special Collectors Issue


75 Club Crackers
1 cup butter
2 cups graham crackers crumbs
1 cup brown sugar
1/2 cup whole milk
1/3 cup sugar
2/3 cup cream peanut butter
1/2 cup semi sweet chocolate chips
1/2 cup butterscotch chips

Line an ungreased 13x9 inch pan with 1 layer of crackers. (I lined my pan with foil)

In large saucepan, melt butter over medium heat. Add graham crackers crumbs, brown sugar, milk & granulated sugar. Bring to boil and boil for 5 minutes stirring constantly. (Begin timing 5 minutes from when you see first bubble). Remove from heat and spread half of the mixture over the crackers in the pan. Place another layer of crackers over mixture. Spread remaining butter mixture then again place layer of crackers.

In small saucepan, combine peanut butter, chocolate chips & butterscotch chips. Melt over medium heat untill melted. (I melted it in the microwave at 50% power). Spread evenly over top of crackers. Chill for at least an hour. Cut into bars.
