Ahhh.....another banana bread recipe. Comfort food. I feel like I constantly have over ripe bananas on my counter. Even when I purchase them green, they seem to ripen so quickly! So I'm always on the lookout for a new banana bread recipe. This one is wonderful. The banana bread recipe search is kind of like the search for a chocolate chip cookie recipe - they kind of all taste the same after awhile. They all have something wonderful about them. This recipe is easy since the butter is melted when added. The butter gives it wonderful flavor and the streusel on top gives a nice cinnamon crunch.
Banana Bread with Oatmeal Cinnamon Streusel
- 5 or 6 over-ripe bananas, smashed up (mine were small to medium)
- 2/3 cup melted butter
- 1 1/2 cups granulated sugar
- 2 eggs
- 2 tsp vanilla
- 2 tsp baking soda
- dash of salt
- 3 cups cups flour
For the streusel:
- 1/3 cup granulated sugar
- 1/3 cup brown sugar
- 1/2 cup flour
- 1/3 cup old fashion oats
- 1 tsp cinnamon (add more if you'd like)
- 6 tablespoons cold butter
- Preheat oven to 350. Spray your loaf pan/pans. (I line the bottom of mine with a strip of parchment & I have better luck when I spray only the bottom of my pans with cooking spray, not the sides - mine are nonstick coating)
- Mix bananas, butter, sugar, egg, and vanilla together. sprinkle baking soda and salt around on top of the banana mixture. Then gently stir in flour - just till incorporated. Do not overmix.
- In a small dish, mix together the dry streusel ingredients. Cut in the cold butter. (I used a food processor for this part - took about 20 seconds). If you do use a food processor, leave your oats out until after you've run your processor or they will end up all crushed up with the flour & sugar. Fold them into the streusel mixture at the end.
- Add the batter to the loaf pan. Sprinkle the top generously with streusel.
- Bake until toothpick comes out clean. My mini loaf pans took about 30 minutes.

Thanks for posting. I am a big fan of banana bread and have the same problem of them over doing it on the counter. I have not seen one with the Oatmeal streusel.. very excited to try it out. Thank you so much for sharing.

I like the idea of streusel on anything. I've never had good luck with banana bread. I'll keep this one in my back pocket.
Does this make a 9 x5" loaf? I'm making this now and it just overflowed all over my oven. There is also a puddle of grease on top, which I've never seen before and I've made other baked goods with a streusel topping. What did I do wrong?

Oh my word! Overflowing in the oven? Yikes! I made mine into mini loaves and it made 6 of them (each is 6 inches long, 3.5 inches across & 2.5 inches deep). I rarely use my larger loaf pans but I'm almost certain it would make 2 of them. As for the grease on top...ummm... I have not experienced that. The only thing I could think of that would create such a problem, possibly, is leaving too many large chunks of butter in the streusel, which causes it to pool up in places OR the butter was room temp when mixed into the streusel. And if you didn't do either of those, well it sounds like more dry ingredients were needed in your streusel. I feel bad cdcooks. Cleaning out the oven is never a fun thing, especially when there is burnt crap on the bottom. Hopefully you will be able to salvage some of the bread that baked in the pan and didn't spill over. The streusel is awesome! I also love that this banana bread recipe really is a "quick" bread -- some banana bread recipes have beating eggs for 10 minutes. That's not very quick when you add it all up!
