Pink Azalea Cake

Reading my latest Cooks Country magazine last week, I came across the Pink Azalea Cake. I knew at that moment that I had to make that cake for my friend Azalea's birthday. What a fun and delicious cake! Not to mention beautiful. It's basically a triple layer white cake with the middle layer colored pink with food coloring. There is also some berries bits between the layers. In my cake, it was raspberries - my favorite berry. The icing used is the classic 7 minute icing which is basically like marshmallow fluff. Gosh, I love eating that stuff right off a spoon! The cake came together perfectly and Azalea loved it! The magazine gave no recipe, it just gave the details of what it's supposed to look like. So I used my own white cake recipe and I used a 7 minute icing recipe out of one of my cake books.
